Vegetarian-cacciatore

Ingredients for two people

1 red onion, finely chopped
2 garlic cloves, minced
1 carrot, peeled and finely diced
2 celery stalk, finely diced
300 g button mushrooms, sliced
80 ml white wine
1 tin diced tomato
1 tbs tomato paste
2 tbs balsamic vinegar
150 g couscous
2 tbs parsley, finely chopped

For the cacciatore

In a large saucepan or pot sauté the onion, garlic, carrot, and celery for approximately 5 mins or until the ingredients soften. Add the mushrooms and white wine to the saucepan and allow it to simmer for 5 mins.

Add the diced tomatoes, tomato paste and vinegar and bring to the boil. Reduce the heat to low and gently simmer for approximately 15-20 mins stirring occasionally until the sauce has thickened.

For the couscous      

Place the couscous in a bowl and boil some water (the water has to be double the amount of your couscous so “e.g.” 300ml of water for 150g of couscous). Pour the water over the couscous, stir with a fork, and then cover the bowl tightly with cling wrap, leave to sit for 5 minutes. Remove the cling wrap and then begin to fluff the couscous with a fork.

To serve        

Serve your flavoursome cacciatore with freshly chopped parsley.

Mushroom burger with wilted spinach

Mushroom burger with wilted spinach

Ingredients for two people

2 field mushrooms
2 burger buns
2 red onion, sliced into rings
2 tbs balsamic vinegar
70 g spinach
2 garlic, crushed
60 g sun-dried tomato
70 g french goats cheese

For the mushrooms

To start – get your bread out of the fridge to bring it to room temperature and preheat the oven to 180C.

Heat some oil in a pan over medium-high heat, place the mushrooms in the pan and cook for 3 minutes on either side. Once browned, place the mushrooms on an oven tray, season with salt and pepper and place in the oven for 5 minutes or until they have softened.     Set aside in a warm resting place.

For the bread                  

Once you pull the mushrooms out of the oven this is a good time to bake your fresh bread, place the burger buns into the oven for 8-10 minutes, when ready remove from the oven and slice in half to get ready for burger assembly.

For the filling 

In a pan, heat some more olive oil in a pan and add the onion rings, drizzle them with balsamic vinegar and cook for 3 minutes on either side or until they have cooked right through and caramelised. Once cooked remove from the pan and leave aside in a warm place. Add a little more oil to the pan, add the spinach and the garlic, cook for 2 minutes or until the spinach leaves have wilted down. Remove aside with the onion rings.

To serve 

Start by dividing the spinach over the bases of the burger buns, then the onion, then the mushrooms, followed by the sundried tomato, and finally the goats cheese.

Pork and mushroom stir fry

Pork Stir Fry

Ingredients for two people

150 g jasmine rice
1 tbs vegetable oil
300 g pork strips
1 spring onion, roughly chopped
2 garlic cloves, sliced
1 small red chilli, deseeded and sliced
1 ginger, small knob, finely sliced
200 g mushrooms, sliced
1 bunch bok choy, stem removed and sliced
2 tbs oyster sauce

For the rice

Bring a large pot of salted water to the boil. Add the rice and cook it for 8-10 minutes or until soft. Drain and set aside.

For the stir fry  

Heat the vegetable oil in a wok or large pan over high heat. Add the pork and cook for 2-3 minutes or until just cooked through and then remove the pork strips from the pan and leave aside in a warm resting place.

In the same pan add a little more vegetable oil and fry the spring onion, garlic, chilli and ginger for 1 minute or until aromatic. Add the mushrooms, bok choy stems, and then fry for 2-3 minutes or until the mushrooms have softened. Add the boy choy leaves, oyster sauce and then return the pork to the wok, cook for another 2 minutes until everything is warmed through.

To serve  

Divide the stir fry between bowls and enjoy!

Pearl barley risotto with marinated feta

Pearl barley risotto with marinated feta

Ingredients for two people

2 tbs olive oil
1 red onion, finely chopped
2 garlic cloves, crushed
2 celery stalks, finely sliced
150 g pearl barley
3 sprigs thyme, de-stemmed
20 g vegetable stock
1 tin diced tomatoes
100 g marinated feta, crumbled
2 tbs oregano, finely chopped and de-stemmed

For the pearl barley

Heat the olive oil in a large pan. Add the red onion, garlic, and celery to the pan and saute for 5 minutes.

Add the pearl barley and the thyme, cook for 2 minutes. In a separate pot dissolve every 20g of vegetable stock into 1 litre of boiling water (20g:1L), leave the stock on the stove to keep it hot.

Start by adding one ladle of stock at a time to the pearl barley. As soon as the stock absorbs into the barley add another ladle, continue this process and until all of the stock is used up.

Once the stock is all used up add the diced tomatoes and cook for a further 5 minutes. If your barley is still not cooked, add some more boiling water.

To serve      

Remove the barley from the heat and divide between bowls. Crumble your marinated feta over the barley and sprinkle with the freshly chopped oregano.

Chicken meatballs

Chicken meatballs

Ingredients for two people

250 g spaghetti
350 g chicken mince
2 tbs oregano, chopped
3 tbs thyme, chopped
1 onion, finely chopped
2 garlic, crushed
50 g breadcrumbs
1 egg, lightly whisked
1 tin diced tomato

For the meatballs

Place the chicken mince, half the oregano, half the thyme, half the onion, half of the garlic, breadcrumbs, and the egg in mixing bowl. Mix together well and season with salt and pepper. Heat some olive oil in a large pan over medium heat. Add the meatballs to the pan carefully, cook for 5 minutes and turn them around so that they brown on all sides and hold together.

For the sauce

Heat some olive oil in a pan over medium-high heat. Add the remaining garlic, onion, thyme, and oregano to the pan and saute for 3 minutes. Add the white wine (if you are using it) and cook for 3 minutes to burn off the alcohol. Add the tomatoes and bring to a simmer. Add the cooked meatballs to the sauce and cook for a further 5 minutes.

For the pasta

In a large pot bring some salted water to the boil. Add the pasta to the boiling water and cook for approximately 10 minutes or until “al dente”. Drain and you’re ready to serve!

To serve 

Divide the pasta between bowls, then spoon over the meatballs and the tomato sauce, enjoy!

Spanish stew

Ingredients for two people

10 g vegetable stock
2 tbs olive oil
1 onion, finely chopped
2 garlic, crushed
1 red capsicum, sliced & chopped
1 tbs smoked paprika
1 tin chickpeas, strained & rinsed
1 tin diced tomatoes
1 lemon, juiced
3 tbs parsley, finely chopped
150 g couscous

For the stew

For every 10g of stock dissolve into 500ml of boiling water (10g:500ml) and set aside.

Heat the olive oil in a pot or casserole dish over medium-high heat. Add the onion and garlic and saute for 2 minutes. Add the red capsicum and saute for a further 3 minutes, add the smoked paprika and cook for 1 minute. Add the vegetable stock, chickpeas, and the diced tomatoes and bring to a boil. Reduce the heat down to a gentle simmer and leave to bubble away for 20 minutes.

Remove the stew from the heat, add in the lemon zest, its juice, and the parsley. Taste and adjust seasoning with salt and pepper.

For the couscous  

Place the couscous in a bowl and boil some water (the water has to be double the amount of your couscous so “e.g.” 300ml of water for 150g of couscous). Pour the water over the couscous, stir with a fork, and then cover the bowl tightly with glad wrap, leave to sit for 5 minutes.

To serve        

Fluff the couscous with a fork and divide between bowls and spoon over the spanish stew and get stuck in!

Moroccan lentil soup

Ingredients for two people

1 onion, diced
2 garlic cloves, crushed
2 celery stalks, finely sliced
2 tsp HF Moroccan spice
10 g vegetable stock
1 tin diced tomato
1 tin lentils, strained & rinsed
2 tbs parsley, chopped
2 tbs coriander, chopped
1 bread rolls, halved
1 lemon, juiced

For the soup

Heat some oil in a pot over medium-high heat. Add the onion, garlic, and celery and saute for 3 minutes. Add the morrocan spice and cook for a further minute. Dissolve each 10g of vegetable stock into 500ml of water. Add the stock, diced tomatoes, and lentils to the dish and bring to the boil. Reduce to a simmer and add the parsley and coriander, leave for 20 minutes.

For the bread    

Slice the bread rolls in half and lightly toast them either under the oven grill or in the toaster – if you are feeling naughty lather them with butter!

To serve      

Divide the soup between bowls and offer a generous squeeze of lemon (reserving the pips), season with salt and pepper. Dunk your freshly toasted turkish bread into the soup and enjoy!
