Pork with fig and apple

Ingredients for two people

350 g pork tenderloin
1 apple, cored & thickly sliced
2 figs, quartered
1 rosemary sprigs
90 g green spinach
90 g green beans

Hellofresh recipe

For the pork

Preheat the oven to 180C. Heat some oil in a pan to medium-high temperature, add the pork and cook for 1-2 minutes per side or until golden and set aside.

Place the apples, figs, rosemary, and the pork into a baking tray. Cook for 12 minutes or until the pork is just cooked through and the fruit has softened. Cover and set aside.

For the greens

Bring a pot of salted water to boil. Add the beans and cook for 2-3 minutes, remove the beans from the water (reserving the boiling water) and rinse under cold water.

Remove the pot from the heat and place the spinach in the hot water and set aside for 2 minutes or until the spinach has wilted, strain and set aside.

To serve

Slice the pork into thick slices and divide amongst plates, serving with a side of the roasted fig and apple, and the beans and spinach.
