Marinated prawns with couscous and tomatoes

Ingredients for two people
|1 tsp||HelloFresh marinade mix|
|2||garlic cloves, crushed|
|2 tbs||olive oil|
|60 g||baby spinach|
For the marinade
In a bowl combine the spice mix, lemon juice and zest, garlic and oil. Mix until well combined. Add the prawns and toss to coat. Allow the prawns to marinade for a few minutes.
For the prawns
Preheat a pan or griddle on medium high heat. When hot cook the prawns for 2-3 minutes each side or until done.
For the couscous
Place the couscous in a large plate. Bring some salted water to the boil (the water has to double the amount of your couscous so “e.g.” 250ml of water for 125g of couscous) and add it to the couscous. Cover and allow it to rest for 5 minutes.
Fluff the cous cous with a fork and place it on the serving plate along with rocket and tomatoes. Remove the prawns from the griddle and serve still hot. Enjoy!
