Lentil pattie wraps with hoummous

Ingredients for two people

2 tbs olive oil
1/2 red onion, finely chopped
1 garlic clove, crushed
1/2 tsp HelloFresh spice mix
400 g lentils, strained & rinsed
2 tbs coriander, chopped
25 g breadcrumbs
1/2 egg (opt.), lightly whisked
1 tbs flour
100 g hommous
50 g rocket
1 tomato, sliced
2 lebanese bread

Hellofresh recipe

For the lentils

Heat half of the oil in a frying pan over medium heat. Add the onion and cook for 3 minutes or until soft. Add garlic, hellofresh spice mix and stir until well combined. Cook for 1 minute. Cool for 3-4 minutes.

Add lentils, coriander and onion mixture to food processor. Process until well combined and roughly chopped (you can mash with a fork if you wish). Transfer to a bowl with the breadcrumbs. Add egg and flour and stir until combined. Roll heaped tablespoons of the mixture into small patties.

Heat a frying pan over medium heat. Cook the patties, in batches if necessary for 3 minutes on each side or until golden. Transfer to a tray and cover to keep warm. Cook remaining patties.

To serve

Divide the hommous, rocket, and tomato, between the Lebanese bread. Wrap it up and enjoy!
