Grilled nectarine with blue cheese and walnuts

Ingredients for two people
|75 g||blue cheese, crumbled|
|50 g||walnut, crushed|
|3 tbs||olive oil|
|1 tbs||balsamic vinegar|
For the quinoa
Bring a large pot of salted water to boil, add the quinoa and cook for 13 minutes or until soft. Strain the quinoa through a strainer and set aside.
For the salad
Heat a griddle pan to medium with a little bit of oil. Slice each nectarine into 4 pieces and place on the pan and cook for 1-2 minutes on either side.
Assemble your salad by gently tossing the grilled nectarine, rocket, and quinoa. Top with crumbled blue cheese and walnuts.
Combine the olive oil with the balsamic vinegar, dress your salad and serve.
