Tandoori Haloumi burgers

Ingredients for two people
|300 g||haloumi, cut into burger friendly shapes|
|2 tbs||tandoori paste|
|1/4||red onion, finely diced|
|1/4 cup||coriander, finely chopped|
|1||lebanese cucumber, thinly sliced|
For the haloumi
Slice the haloumi into large square slabs so they will fit well in your burger. Coat the haloumi with the tandoori paste and set aside. Slice the onion horizontally so you have 5mm thick cross sections showing you all the rings.
Heat a pan to medium heat and lightly oil. Cook the haloumi and onion pieces for 4-5 minutes each side or until cooked all the way through. You will need the pan at the right temperature so that you cook the onions and haloumi all the way through without burning them.
For the dressing
While the haloumi and onions are cooking prepare the dressing by mixing the yoghurt with the coriander and salt and pepper to taste.
Assemble your burger by layering the haloumi, onion, cucumber and tomato. Top with yoghurt dressing and enjoy!
