Corn, coriander and chicken burgers

Ingredients for two people
1/2 cob sweetcorn, kernels removed
300 g chicken mince
1/4 onion, finely chopped
1/4 cup coriander, finely chopped
1/4 cup breadcrumbs
1/2 egg (optional), lightly whisked
2 wholemeal bread rolls
1 lebanese cucumber, thinly sliced
50 g rocket
For the Burger
1. Place corn kernels, chicken mince, onion, half of the coriander, breadcrumbs and egg into a medium bowl. Season with salt and pepper to taste. Mix until well combined. Form mixture into a patty for each person.
2. Heat a large non-stick frying pan over medium heat with a little oil. When hot add patties and cook for 4-5 minutes on each side until golden and cooked through. Drain on paper towel.
3. Place a cooked patty on each bread roll. Top with cucumber, rocket and remaining coriander. Drizzle with the sauce of your choice (we say sweet chilli!) and tuck in!
