Zucchini. You can steam it, fry it, bread it, or grill it. Either way when it accompanies a cutlet of pork, these unique flavours are deliciously intensified.
Ingredients for 2 people
3 tbs soy sauce
1 tbs vinegar
1 tsp five spice blend
½ tbs sugar (optional)
2 pork cutlet
1/2 tbs olive oil
1 zucchini, julienned
180 g soba noodles
For the marinade
1. Combine half the soy sauce, vinegar, five-spice blend, and sugar (if using) in a bowl. Add pork, coat with marinade and set aside.
For the pork
2. Heat a lightly oiled pan over medium heat. Cooking time will depend on the thickness of your meat but we imagine it will take 4-5 minutes each side. When cooked to your liking, remove from heat and cover with foil while you cook the noodles.
For the noodles
3. Julienne or finely slice the zucchini. Bring a pot of water to the boil and cook the soba noodles for 3-4 minutes. Drain noodles and toss through zucchini and remaining soy sauce. Enjoy!
