HelloFresh recipe: Tofu Stir-fry

Who needs meat when you have tofu, or as we like to call it, the nutritional powerhouse, at your disposal? You can grill it, steam it, simmer it or stir fry it and as you’ll discover by embracing the latter, it’ll taste delightful no matter what!

Ingredients for 2 people:
2 tbs soy sauce
1 tbs rice wine vinegar
1 tsp sesame oil
1 tbs olive oil
1/2 onion, sliced into strips
1 clove garlic, minced
1/2 red chili, finely chopped
1/2 tbs ginger, finely grated
1/2 carrot, peeled and thinly sliced
150g firm tofu, cut into 2 cm cube
1/2 zucchini, cut into crescents
50g green beans, top and ends trimmed
50g green beans, top and ends trimmed
50g red cabbage, sliced
150g white rice

HelloFresh recipe:
1. In a small bowl, combine the soy sauce, rice wine vinegar and sesame oil. Stir until well combined.
2. Heat the olive oil in a wok or large non-stick fry pan over medium heat, add the onion, garlic, chili and ginger and stir. Cook for 2 minutes.
3. Toss in the carrot and tofu and cook for 2-3 minutes. Add the zucchini, green beans and red cabbage, soy sauce mixture and stir well. Cook for a further 3-5 minutes or until vegetables are tender.
4. Serve up your tasty tofu stir fry in warmed bowls with boiled rice if desired.
