HelloFresh recipe #24.2 Moroccan style snapper with couscous

Snappers are salt-water fish that are mainly found in warm tropical waters. Though there are several species of snappers, each one is good when cooked. Their mild flavoured taste and flaky texture make them popular with diners who have a hankering for fish. This is the second recipe of the week, and this one is rewarding as it is incredibly easy to cook and tastes really good as well. Happy cooking!
Ingredients for 2 people
½ cup coriander, finely chopped
1 ½ tsp spice blend
1 clove garlic, crushed
1 tbs olive oil
2tbs lemon juice
2 fillets snapper fillets
125g cherry tomatoes, quartered
1. Mix together the coriander, spice blend, garlic, oil, lemon juice, salt and pepper in a small bowl. Rub the mixture into the fish, coating well, and allow to rest for 5 minutes.
2. Place the couscous in a heatproof bowl and add salty boiling water in a proportion 2 to 1 (e.g. 400ml of water for 200g couscous). Cover and allow all the water to be absorbed for roughly 5 minutes. Remove the cover and fluff the couscous with a fork, season with salt and pepper and stir through a little oil if you wish.
3. In the meantime preheat a lightly oiled pan or barbecue plate over medium heat. Cook fish for 3 minutes each side or until cooked to your liking. Serve with couscous and cherry tomatoes.
