HelloFresh recipe: Prawn Saganaki!

A staple dish in any Greek taverna, this saganaki recipe is a perfect winter warmer that simply exudes flavour. Couple it with your favourite glass of vino if that’s how you roll and enjoy. Opa!
Ingredients for 2 people
1 tbs olive oil
1/2 red onion
2 cloves garlic, thinly sliced
1/2 tin chopped tomatoes
1 tbs tomato paste
1 red chilli, finely chopped
1/4 cup white wine
1 tsp dried oregano
1 bay leaf
60g Greek feta, crumbled
300g green prawns
Parsely, to serve
Toasted bread, to serve

1. Preheat the oven to 200oC. Heat a large saucepan with the oil and sauté the onion and garlic until it softens.
2. Add the tomatoes, tomato paste, and chilli and cook for approximately 3 minutes. Add the white wine, oregano, bay leaf, salt and pepper and simmer until the sauce thickens (6-10 minutes).
3. Transfer the sauce to a baking dish and crumble half of the feta over the sauce. Gently push the prawns into the sauce and crumble the remaining feta over the prawns. Bake the prawn saganaki for approximately 5-10 minutes or until the prawns are cooked through.
4. Sprinkle the parsley over the prawn saganaki and serve with thick slices of crusty bread to mop up the tasty sauce.

This sounds right up my street. I have never been to Greece but I love proper Greek dishes, like this. And I appear to have all of the ingredients. Yum!
